Sugar cookies, pasta salad and a shattered plate!

Mamma’s day is tomorrow… My mom is my best friend in the whole wide world and I wouldn’t trade my mom for anyone in the whole wide world.  I’m so blessed to be the daughter of such an amazing person.  My mom is sweet, caring, honest, inspiring,  fun and thoughtful….  I really can go on forever here.  All in all, she really does have the biggest heart in the United States of America.   Happy mother’s day to all the little mamma’s out there.  Mom’s make the world a better place! 

This afternoon my neighbor’s came over and we made Mother’s day cookies together.   They made me realize that decorating with others and having the extra help with the clean up rocks!  I really do wish that I had more baking/decorating buddies.

oh yeah and check out this salad I made ffrom scratch for Mother’s Day tomorrow.  It has basil, artichoke hearts, parmessan cheese, rotini pasta, cherry tomatoes, zucchini, olives, purple onions…  This is my first non sweet tooth item that I have ever posted.

FYI: Today, I broke a plate in the kitchen.  I had been going non stop since 6 in the morning- running errands, making salads…  I reached up to grab a plate and somehow I dropped it.  The plate fell to the floor and went everywhere.  There must have been at least 1,000 pieces of shattered glass all over my kitchen floor.  I was home alone and the dogs were outside.  I had no music playing, the house was dead silent and all I could hear was the glass shattering.  I stood there and listened to it shatter for a good 30 seconds.  With my palm placed over my mouth, I endured the sounds of the glass.  It was an excuse to just SLOW down.  You know how they say “stop to smell the roses”.  The glass breaking was beautiful.  It would have been a lot different if someone else was home- “are you okay” “which dish is that?”  “oh no the dogs are going to step on that” “get the dogs away”.   Nope, it was just me and the glass… and the mess (which wasn’t so nice).mothwers day 007mothwers day 005

Billy’s vanilla frosting!

Nearly 3 years ago, Billy Reece, owner of Billy’s Bakery, NYC, shared his infamous recipe, for Billy’s Vanilla Buttercream on the Martha Stewart.  After seeing plenty of hype about this recipe in multiple blogs and Martha Stewart’s website, I knew I was destined to make this recipe atleast once.   It ended up being very easy to make and came out with impressive results.  Billy’s Vanilla Buttercream is certaily not your stereotypical commercial bakery frosting recipe- you know, the kind where it is so sweet you could clinch… However,  it is somewhat close!  It was a little buttery, a little vanilley, and a little more than a little rich… and I liked it A LOT more than just a little.  Until I find a better recipe, Billy’s Vanilla Buttercream is my go-to for cakes and cupcakes from now on.

This delicious batch of frosting  topped my “extra large” chocolate cupcakes.   I topped  the frosting with dark brown chocolate sprinkles to compliment the chocolate cupcake.

This angel food cake is almost sure to be a Weight Watchers classic!

My Aunt Patty came to town so I made her a fruit basket cake.  I used a boxed Angel Food cake from Betty Crocker; however, instead of using water (the only ingredient that is called to add to the cake mix), I used a 13 oz can of pineapple tidbits.  I am trying to loose 10 pounds with weight watchers and they previously recomended making an angel food cake this way- without he heavy whipping cream topping ofcourse!  I mixed the Angel Food cake with the can of pineapple and baked it for a good 40 minutes or so.  After the cake cooled, I stuck it in the freezer for an hour.  I then sliced the cake in half and  filled it with homemade whipped cream and  an assortment of fruit (mandarin oranges, pineapple, bananas and strawberries).  I honestly could not leave this cake alone.  Unfortunately, I was not able to take a picture of the entire cake itself… however, I was able  to snap a shot of my brother’s slice.

Have a Robotic Birthday

Andy’s mom’s coworker ordered a robot cake for her man’s birthday.  She gave me the oppurtunity to design this cake myself which took off the presure of perfection.xblogsyxblogersy

Can you please not make me a pretty cake?

So I have a lot of Andy/ies in my life, and it’s awesome!  My fiance’s birthday was last Friday and he requested that I fully concentrate of the flavor of his cake opposed to the decorations of his cake.  Last year I made him a fruit basket cake which he loved!  This year I made him a white cake filled with homemade whipped cream frosting and freshly sliced strawberries.  I stayed true to my word and focused specifically on the flavor;  however, it turned out elegant in my opinion.  My mom gives me all her hand me downs of her old  magazines which aim towards middle aged women- “womens day”, “good housekeeping”….  yeah you get the point- Might I add that I thoroughly enjoy these magazines!  Anyways,  the new trend I have noticed throughout these magazines is cakes filled with fresh fruit and/or frosting with no  frosting on the outside of the cake.  At first I wasn’t so sure of it, however the more pictures of this trend I saw, the more I dug it!!!  So, here you have it and boy was this cake was fabulous- so fabulous I am making it again this weekend for my big hunk to split with my dad!!!

Busy bee’s celebrate their bee-days too!

One of my favorite friend’s, Andie, birthday was today!  Andie is a busy bee- she works, goes to school and has a future so bright that she’s gotta wear sunglasses!  Happy 25th birthday Andie!

Shamrock cookies- No one is getting pinched over here!

Saint Patrick’s day is tomorrow!  Today, my cousin Stephanie came over and we made cookies together for the first time!  We had so much fun +  she has a natural talent for this business!  She did 20 times better than I ever did my first time cookie decorating!  We baked Basic Rolled Sugar Cookies. We outlined the cookie with brown Royal Icing, which set as our dam. On the inside of the cookie, we filled it with green Powdered Sugar Glaze.   To my jolly surpirse, the powdered sugar glaze did not leak all over the place… Thanks to the brown Royal Icing dam!  All in All, our cookies turned out to be a pure success!  I plan on passing these cookies out to neighbors and close relatives!
